Here is a little something for you to cook this weekend!
I wanted to create a chocolate cake which would be gluten and lactose free, and without fat but still tasty with a soft texture on the palate. Ground almonds are the key! I started to put ingredients together without knowing if it would be sweet enough or if I gonna get a real chocolate fondant at the end…. aaaaand …. The final result is just delicious! Best chocolate cake I ever cooked!
My recipe:
- 120g Belgian dark chocolate (70% minimum)
- 120g ground almonds
- 70g dates
- 2 eggs
- 1 teaspoon Magic Powder
- 1 tablespoon vanilla sugar
- +/- 150ml almond milk
- 1 big tablespoon pumpkin seeds
- some pecan nuts
- scramble the eggs in a big bowl
- sprinkle the Magic Powder on the ground almonds then mix
- add the ground almonds (mixed with the Magic Powder) to the scrambled eggs gradually
- pour the almond milk
- sprinkle the vanilla sugar then mix
- chop the dates and add to the mixture
- add the pumpkin seeds
- melt the chocolate in a bain-marie
- pour the melted chocolate in the bowl then mix homogeneously
- pour the mixture in a cake mold (mine was a rectangle of 10cm/20cm)
- chop some pecan nuts to decorate the top of your cake
- finally, in the oven (bake-370°F) for 30 min
