Sundays are for pancakes

Everyone loves pancakes! It’s to me the best breakfast to enjoy during the weekend. I adapted many recipes but this one is my favorite by far. Keep reading for THE secret tip!

For a stack of baby pancakes or for 6 regular size, you’ll need:

  • 2 eggs
  • 20 g brown sugar
  • 20 ml almond milk
  • 1 tsp baking powder
  • 25 g rice flour
  • 15 g spelt flour
  • a pinch of salt
  • a bit of coconut oil (for the pan)

How to:

  1. separate the egg yolks from the egg whites
  2. in a bowl, beat yolks with sugar
  3. mix flours and baking powder together in another bowl
  4. add to the egg + sugar bowl and whisk
  5. add almond milk
  6. in a whisk bowl, whisk the eggs to form stiff peaks, adding a pinch of salt
  7. with a spatula, fold the egg whites into the batter
  8. cook in a hot pan over medium heat with coconut oil, 3-4 minutes on each side until golden. Tip: add more batter gradually with a spoon on the same pancake to make layers –> veeeery fluffy!
